Benita Crocker Episode Seven

Skrawberries n Cream Cake (yes...skrawberries)

Aight, I made this cake for a baby shower, it was by request, turned out great if I do say so myself.

Now yall know I'm not about to be in nobody's kitchen sifting flour and kneading dough so that cake right thurr, came from box ingredients...yuup, shole did and I'm not ashamed of it. I'm a firm believer in being a modern housewife.

  • 1 box yellow cake mix (and all the shit that goes with it: eggs, oil, etc)
  • 1 jar of strawberry preserves
  • 2 tubs of cream cheese frosting
  • Package fresh strawberries
Okay...first...make the cake (follow instructions on box) EXCEPT, where it says to add water, use milk (unless you lactose intolerant) instead, it makes for a fluffier cake. Also add a teaspoon of vanilla extract if you have it on hand. Pour into a baking dish (I like to use the disposable pans) or you can use the standard 8 or 9 inch cake pans.

Once the cake is done. Allow to cool completely! Do not stick in the freezer to aid in process as (I feel) this causes the cake to lose it's moisture which is what makes the cake soft and fluffy.

Once the cake is cooled, take a long strand of dental floss and cut the cake (lengthwise) down the middle and spread strawberry preserves inside, then replace the top portion of the cake (if you used two 8 or 9 inch cake pans instead of a dish you can simply spread the preserves on the top of one cake and then place the other cake on top.

Now you must "dirty ice" the cake which is basically applying a thin layer of icing to the whole cake. This seals in any crumbs and gives you a flat surface to work with. Once you apply the icing (the cake should be completely covered) allow to sit for an hour, this allows the icing to harden a bit.

Now you'll regular ice the cake, apply icing liberally to all portions of the cake, you want to lay it on a little thick so that you can manipulate the icing a bit...don't worry, it's easy.

As soon as you apply the final coat of icing (you don't have to use all the icing, I just said 2 tubs so you'll have enough) take a spoon and make squiggly motions in the icing, this gives the waved effect you see on the cake above. Do this over the whole cake, tops and sides.

Garnish with strawberries however you like. (You can also use chocolate covered strawberries if you're into that lol)
