Benita Crocker Episode Five

It's been awhile since I blessed you all with a Benita Crocker episode so I decided to do a quick one now...

Buffalo Chicken Dip


If you do alot of entertaining or just like to have some stuff in the fridge that's a "ready to eat" type of deal I highly recommend this.

I got this recipe from a potluck...I was weary of it at first but it's really good.

Ingredients

  1. (2) 10 ounce cans of chunk chicken (drained)
  2. (1) 8 ounce pack of cream cheese
  3. 1 cup Ranch dressing
  4. 3/4 cup Frank's Red Hot Sauce
  5. 1 1/2 cup shredded cheddar cheese
  6. 1 pat of butter (just enough to grease a frying pan)
(Okay...so the recipe calls for cheddar cheese...you can use any you like, I prefer pepper jack on top and mozerella to mix in...but I like spicy food)

Okay soooo...take a frying pan, melt butter, I like to throw in a little bit of garlic because...I love garlic, but alot of people don't like it so you don't have to do that step....once butter is melted, add chicken, saute for a few minutes (since it's already cooked you're essentially just heating it up). Add Frank's Red Hot Sauce and cover chicken completely. Add cream cheese and ranch dressing, mix well. Add 1 cup of cheese, mix well. After all ingredients are mixed well transfer into a casserole dish and cover with remaining cheese...bake until bubbly. Serve warm and with crackers or corn chips.
